1 3/4 lb kumquats (5 cups)
3 cups water
2-3 cups sugar
1 1/2 T fresh ginger (optional)

1. Wash and then cut the kumquats into 4-16 pieces, depending on size. Reserve the seeds and put into a muslin bag or a loose leaf tea bag.
2. Add water to the kumquats to just cover, and the seeds, and bring to a boil (covered). Boil for 5 minutes, then turn off and let sit over night.
3. Bring to a boil, remove seed bag, add sugar and ginger and let boil until marmade gels.
4. Pack into jars.
